The milky way is a spiral galaxy. In the middle of most spiral galaxies is thought to be a supermassive black hole as they have enough gravitational power to be a centre of gravitational pull for more than 100 trillion stars. If it suddenly disappeared without warning, the structure of the galaxy would become unstable due to lots of centripetal forces suddenly disappearing.

Some stars would end up taking very different paths through space. I wouldn’t be surprised if lots of them collided into each other. It would literally be chaos. I think it’s difficult to predict what would happen but humans probably wouldn’t notice much for hundred to thousands of years because the galaxy is so big!
